Emmillia's Meals - 3 Feb 13

Thanks for the invite Kimmer! And hello Marnie:) I've got a few great recipes from Down Under that I can share, and I'll note whether they are kid (friendly (i.e. time consuming). This is a great idea for a blog

Sunday - Beef Ribs (Salt, pepper & fennel, braise, slow cook) and Eggplant Parmagiana (time consuming)

Monday - Chicken Nicoise Burgers (healthy, easy & quick)

Tuesday - Greek Lamb Meatball Salad (healthy, easy & quick). Note that of course I don't actually roast my own red peppers, I buy them in a jar.

Wednesday - Steak and Veg (no thought needed, mid week easy)

Thursday - Lamb Kofta Meatballs in Korma Sauce (easier than it sounds)

  • Meatballs: 500g ground lamb, 1 grated onion, juice and zest of 1 lemon, 2 diced garlic cloves, 1/3 cup breadcrumbs, 1/4 cup mint leaves, 1/4 cilantro (recipe is still good without herbs).
  • Sauce: 400g can chopped tomatoes, 400g can coconut milk, 1 cinnamon quill, 1 Tbs chopped ginger, 1/3 cup korma paste.
  • Method: make meatballs, pan fry for 3 - 4 minutes in a deep pan, set aside. In same pan after removing meatballs, fry up ginger and curry paste for a couple minutes. Stir in tomatoes, coconut, cinnamon quill. Boil, then reduce to a simmer. Put meatballs in sauce, bout 10 minutes, until cooked through and sauce a bit reduce. Put over rice, or have on it's own with a bit of bread.

Friday - PIZZA

  1. Sounds great. I'm going to have to try the lamb meatballs. I'd love the eggplant recipe as well. I'd like to get a few god eggplant recipes.
